Fresh Green Beans with Roasted Onion Sauce

Fresh Green Beans with Roasted Onion Sauce

Ingredients

  • 2 to 3 lb fresh green beans, trimmed.
  • Olive oil
  • 6 to 8 medium onions, peeled, cut vertically through the root end.
  • 6-8 tbsp butter
  • 2 cups chicken broth
  • 3 tbsp sugar
  • 3 tbsp red wine vinegar

Directions

    Preheat oven to 450°. Coat a large baking sheets with olive oil. Arrange onions on the prepared sheets. Dot the onions with four to six tablespoons of butter dividing equally. Season with salt and pepper. Bake until onions are dark brown on the bottom. Roughly 35 minutes.

    Meanwhile, boil the broth and a heavy large Skillet or pot over high heat until reduced to about a 1/2 cup. Takes about 15 minutes. Once reduced, add the sugar and vinegar and whisk until sugar dissolves and mixture comes to a boil.

    Then add the onions to the sauce and reduce the heat to medium low simmer until liquid is slightly reduced, about another 5 minutes.

    The roasted onion sauce can be made ahead and refrigerated. Rewarm over lower heat.

    Cook green beans in a large pot by either steaming or an inch of water to boil for about 5 minutes. Drain well. Return beans to the same spot. Add two tablespoons of butter to toss and coat the beans.

    To serve, mount the beans in a large shallow bowl and top with the onion mixture.
