Kentucky Molasses Cookies

Ingredients
- 1 cup butter, softened
- 1 cup shortening
- 1 3/4 cups granulated sugar (plus extra for rolling)
- 2 large eggs
- 1/2 cup molasses
- 4 cups all-purpose flour
- 4 teaspoons baking soda
- 2 teaspoons ground ginger
- 2 teaspoons ground cinnamon
- 1 teaspoon ground cloves
- 1/2 teaspoon salt

Preheat and Prep: Preheat your oven to 350°F (175°C) and line your cookie sheets with parchment paper.

Cream Butter and Sugar: In a large mixing bowl, beat the butter, shortening, and 1 3/4 cups of sugar together until light and fluffy.

Add Wet Ingredients: Beat in the molasses and eggs until well combined.

Mix Dry Ingredients: In a separate large bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt.

Combine: Gradually add the dry flour mixture into the creamed butter mixture, beating until the dough is smooth.

Shape and Coat: Roll the dough into 1 1/2-inch balls, then roll each ball in additional granulated sugar.

Bake: Place the balls 2 inches apart on the prepared baking sheets. Bake at 350°F for about 11 minutes.

Cool and Store: Cool the cookies on a wire rack. Store them in a tightly covered container to keep them soft.
